Creamy Garlic & Herb Haricot Bean Mash: A Lighter Take on Comfort Food
Simple, nourishing and full of flavour. This creamy garlic bean mash is a lighter alternative to potatoes, made with cooked white haricot beans and just a few everyday ingredients. It’s naturally gluten-free, packed with plant protein, and works beautifully as a warm side, a dip or a toast-topper.

Garlic & Herb Haricot Bean Mash (Serves 2–4)
Ingredients:
1 cup of dried white haricot beans (soaked overnight and cooked)
2 tbsp of olive oil or butter
1 garlic clove, minced
1 tbsp of lemon juice
Salt and black pepper to taste
Optional: 1 tbsp of chopped fresh herbs (parsley, thyme or rosemary)
Method:
If starting with dried beans, soak overnight and simmer for 1–1.5 hours until soft. Drain.
In a small pan, warm the olive oil and gently sauté the garlic until soft but not browned.
Add cooked beans, lemon juice, salt and pepper.
Mash with a fork or blend until creamy. Add a splash of warm water or oil to loosen, if needed.
Stir in chopped herbs and serve warm, or chilled as a spread or dip.
Serving suggestions:
As a side with roast vegetables or grilled meat/fish
As a base under poached eggs or pan-fried mushrooms
Spread on toast with a drizzle of olive oil and cracked black pepper
As a warm or cold dip with crackers or crudités
