Overnight Chia Pudding: An Easy, Nutrient-Rich Start to the Day

Light, creamy and endlessly adaptable — overnight chia pudding is a naturally gluten-free, plant-powered breakfast that takes just minutes to make. Packed with fibre, omega-3, and slow-release energy, it’s a brilliant make-ahead option for busy mornings or gentle resets.

Chia Pudding Base (Serves 2)

Ingredients:

4 tbsp of chia seeds

250ml of a milk of your choice (plant-based or dairy)

1 tsp of maple syrup or honey (optional)

½ tsp of vanilla extract (optional)

Method:

Add all ingredients to a jar or bowl and stir well.

Wait 5 minutes, STIR AGAIN (very important to avoid clumping), then cover and refrigerate.

Chill overnight, or for at least 4 hours, until thickened to a pudding-like consistency.

Topping Ideas:

Fresh berries or sliced banana

A dollop of yoghurt

Nut butter swirl

Homemade granola

Stewed apple or pear with cinnamon

Why Chia?

Chia seeds absorb up to 10 times their weight in liquid, forming a gentle gel that's soothing for digestion. They're naturally high in fibre, omega-3, and plant-based protein - they're perfect for anyone looking to support gut health, energy and focus.

Make it Yours:

Add a spoon of cocoa powder for a chocolate version

Mix with blended mango or raspberries before setting

Layer with fruit compote or oats for a grab-and-go jar
