These buckwheat seeds grow into delicate shoots with soft leaves and attractive red-tinged stems - perfect for salads, stir-fries, or as a fresh garnish. Often called buckwheat lettuce, it’s quick to grow and thrives in trays at 20–25°C.
Naturally high in vitamins A and C, calcium, iron, chlorophyll, lecithin, and potassium, with a good protein content, buckwheat microgreens are also a good source of amino acids.
Though often grouped with cereals, buckwheat (Fagopyrum esculentum) is a pseudo-cereal - unrelated to wheat, and actually closer to rhubarb and sorrel.
